Georgina’s Restaurant has some of the most delectable pasta dishes in eastern CT. While we think of pasta as culturally Italian. Wherever it came from, pasta reigns as a comfort food. It is likely the descendent of ancient Asian noodles. A common belief about pasta is that it was brought to Italy from China by Marco Polo during the 13th century. It is thought that pasta was introduced to Italy during the Arab conquests of Sicily in the 9th century AD. This food item changed the region’s cuisine. It also known that by the 12th century, the Italians had learned from the Arabs methods for drying pasta to preserve it while traveling. Further support for this theory can be found by the fact that, in many old Sicilian pasta recipes, there are Arab gastronomic introductions. Pasta is made from unleavened dough made from ground durham wheat and water or eggs. The dough can be rolled flat, cut and dried, or forced through holes in an extrusion process. With a high gluten content and low moisture, it is well suited to automated pasta production.
